- Cooked in a traditional, mesquite-wood-fired stone oven (without steam)
- Milled using an automated tahona (traditional stone wheel mill)
- Fermented with fibers (bagasse) in open air wood tanks (tinas), using spring water & ambient yeast
- Distilled in historical copper pot stills from the 19th century
- Distinct aromas of mesquite, marjoram, menthol, and burnt marshmallow carry through to the palate where they are joined by subtle notes of purple flowers, fresh vanilla bean, dried dates & figs, heath bar, and a persistent pulse of salinity
