100% Chardonnay.  On the nose you’ll discover floral aromas of jasmine and golden rose, along with citrus blossom and caramelised Meyer lemon, framed by a sharp, steely flint edge.  The palate is rich lemongrass…Mirabelle plum, candied citrus and passion fruit curd mingle with a mineral backbone of wet stone and a saline, mouth‑watering lift.  The texture is both intense and elegant with fine acidity offering balance and length. This wine’s minerality and citrus‑driven richness make me think roasted oysters on the half shell or lightly grilled sea‑scallops with lemon‑butter; a roasted halibut with caper‑lemon beurre blanc. For richer fare, try seared foie gras or a creamy herb‑butter chicken.
