Classic Cornas, from 100% Syrah. Vincent Paris is the co-president of the appellation, and serves its reputation well. This wine comes from older vines that sit on a southeastern facing vineyard on a slope of a whopping 60 degrees! No chance for mechanical harvesting here. He opts for more concentrated fruit, pruning to only four bunches per vine where the norm is between five and seven. The ultra concentrated, flavorful Syrah grapes are then fermented 33% whole cluster, at very low temps, mostly in barrel. Enjoy this classic, and delicious expression with brisket tacos, or chiles rellenos.
