Thomas Niedermayr’s Sauvignier Gris BIO of the year 2022 is an outstanding wine that not only impresses with its exquisite taste, but also with its organic production. The grapes are gently destemmed and spontaneously fermented by the vineyard’s natural yeasts. Careful aging then takes place over 12 months on full yeast in large oak, chestnut and acacia barrels, followed by a further 7 months on fine yeast in steel barrels. In April 2024, the wine is bottled unembellished and unfiltered to preserve its purity before undergoing further aging in the bottle.The bouquet of Sauvignier Gris BIO is characterized by tempting aromas of herbs, vineyard peach and grapefruit, which offer an inviting olfactory experience. On the palate, the wine has a distinct minerality and a fine acidity, which round off its complex profile.
