Description
This vintage of Les Rascasses is drawn entirely from 75 year-old Cinsault vines, grown on limestone soils just above the Mediterranean. They are low-yielding and dry-farmed, resulting in some of the most concentrated rosé you may have ever sipped on. It is pale and bright, familiar to southern French blush, but anchored by a saline, mineral backbone tied through with wild berry flavors and aromatics. Pair this with grilled, slightly charred eggplant, topped with fresh yogurt, dill, lemon zest, and pine nuts.
