- Maestro Destilador Oscar Manuel
- Distilled from 100% Oaxacan heirloom white, red, purple, and yellow corn varieties
- Corn is milled using a mechanical hammer mill
- Open-air fermented using well water, yeast, and vinasse from previous distillations
- Double distilled in a hybrid pot and column still composed of copper and stainless steel
- Aged a minimum of 3 years in a combination of new French oak, ex–bourbon barrels, and barrels used to age Mexican sherry-style wine
- Roasted corn, chocolate cherry cordial candy, cinnamon, and almond on the nose precede a bold palate led by grilled corn—charred husk and all—and earthy, vegetal undertones of parsnip, spinach, and dark chocolate with lingering notes of creamed corn, cocoa powder, and green peppercorn on a dry and moreish finish
