BODEN
The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel Mountains with deposits of sand and clay. The south-east orientation, constant ventilation due to falling winds and the autumn temperature differences between day and night create a unique microclimate in which the grapes ripen well on the vine for an above-average period of time and thus develop an optimal acid-sugar ratio

The Praeclarus Pas dosé DOC from 2021, produced by the St. Pauls Winery, is a remarkable sparkling wine that impresses with its elegance and finesse. The Chardonnay grape variety gives it a delicate variety of aromas of ripe apples, citrus fruits and a touch of brioche. The color is light gold with fine, persistent perlage.
