The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel Mountains with deposits of sand and clay. The south-east orientation, constant ventilation due to falling winds and the autumn temperature differences between day and night create a unique microclimate in which the grapes ripen well on the vine for an above-average period of time and thus develop an optimal acid-sugar ratio.

Praeclarus Brut DOC from the St. Pauls Winery is an outstanding sparkling wine that impresses with its elegance and complexity. The color of this wine is brilliant yellow with golden reflections. The scent develops an intense, fine bouquet of almond blossoms, peaches and apricots, complemented by nuances of fresh hazelnuts and bread crust. On the palate, Praeclarus Brut is lively and refreshing, with a very fine, long-lasting perlage and a harmonious, complex taste that wonderfully reflects the aromas of the bouquet.

This sparkling wine is made from 100% Chardonnay grapes, which grow in the high-altitude vineyards above San Paolo. These vineyards are located between 300 and 500 meters above sea level on calcareous dolomite soils, which give the wine its special minerality

and freshness.
