The Blauburgunder DOC Amantus 2023 from Eichenstein stands out with its deep red colour, immediately appealing to the senses. Its delicate bouquet reveals a refined combination of red fruit aromas and subtle spicy notes. On the palate, the wine is harmonious and well-balanced, offering an elegant interplay of fruitiness and fine tannins, supported by a refreshing acidity. The vinification of Amantus begins with a multi-day cold maceration, followed by approximately 10 days of fermentation on the skins. After this phase, the young wine is racked and clarified for two days, before being transferred to barrique barrels, where it undergoes malolactic fermentation and matures for a further 10 months, developing its characteristic complexity and depth. Finally, the wine is carefully prepared for bottling to preserve its unique aromas and nuances. Its elegant structure, vibrant fruit expression, and remarkable balance make this Pinot Noir a perfect companion for special occasions and moments of refined enjoyment.
