Description
This wine is made from 50% Pinot Noir, 25% Gamay Noir, and 25% Mondeuse. Inspired by the profoundly delicious and lush reds from the Jura in France, this wine is pretty, fruit driven, but extremely complex and evolving. Each of the grapes were separately fermented whole-cluster in steel tanks, and aged in neutral oak before blending. It showcases very pure fruit, with notes of black raspberry, red plum, and blueberry, while also maintaining very smooth soft tannins and a fuller body than it feels. Pair this with a tamarind-glazed salmon filet, served with stuffed cabbage.
