What you should know about Mezcal: Authentic Mezcal is born in the state of Oaxaca, where the natural characteristics of the clima and soil are ideal for the growth and development of the Maguey cactus from which Mezcal is made. The result is a unique Oaxaca product, unlike any other in the world. Mezcal is distilled from the base and head of the Maguey cactus. These are transformed in a process of heating and fermentation which yields the characteristic taste and aroma of authentic Mezcal. The Mezcal worm lives in the heart of the Maguey cactus; it is an intregal part of the plant itself. Due to this, it absorbs the unmistakable taste and aroma of the plant – characteristics which it passes on to the final product. For a Mezcal to be authentic, it must fulfill the following requirements:1. Good quality Espadin – type Maguey plants 8 to 10 years old.2. Natural manufacturing processes. 3. No use of chemical components. 4. The fermentes juice of the Maguey must be distilled twice.
