Description

This wine is made from 80% Chardonnay and 20% Pinot Noir. It is declassified Franciacorta due to the holistic/biodynamic approach Nicola takes with his vines. Vinification takes place by spontaneous fermentation in a mix of stainless steel and cement, and the wine spends 30 “moons” on its lees (2.5 years). The vineyards never see any chemical treatments, and instead are filled with biodiversity; olive trees, blackberry trellises and native herbs grow throughout the property and give Nicola’s vineyards added soil health and life. This wine punches at the same level as some of the great Champagnes, as the limestone soils of Lombardy contribute to an intense minerality and sharpness of fruit. Pair this with oven baked oysters, poached halibut, or lobster tails.
