The region is renowned for its wild Salmiana agave, which thrives in the high plateau climate of intense sun, heavy rainfall, and rocky soils. Mezcalero Juan Manuel Pérez Juárez oversees the production, maintaining time-honored methods that honor both land and heritage. Unlike many other mezcals, the agave is steamed in stone ovens rather than roasted underground, resulting in a distinctive style that emphasizes clarity, salinity, and terroir expression rather than smoke.
