FREISTIL BIO 2023 by Thomas Niedermayr represents a creative cuvée made from the leading grape varieties Solaris, Bronner and Souvignier Gris, which grow on the slopes of the Gandberg farm above Eppan. The grapes were pressed after hand-selective harvesting, received a brief mashing contact and were then spontaneously fermented in stainless steel tanks. Bottle fermentation began in autumn of the same year, while the must was still fermenting.In the bottle, FREISTIL BIO 2022 has a lively cloud and a fine straw-yellow color. Its medium-strength foaming in the glass gives off light floral aromas, accompanied by notes of mandarin and lemon peel. On the palate, it harmoniously combines freshness, acidity and a touch of tannins. This Pet Nat is not only an outstanding aperitif wine, but also a wonderful accompaniment to spring salads with fresh goat cheese.
