Description

This wine is made from equal parts Chardonnay and Savagnin. The Chardonnay is vinified without oxidation, a style called ouillé, while the Savagnin is aged for three months sous voile, or under a veil of yeast that allows a controlled rate of oxidation. Although his vineyards are within the Château-Chalon appellation, famous for its Vin Jaunes, François labels his wines Côtes du Jura because he does not produce them in the same oxidative style required for the AOC. The wine is still oxidative, with the nose and palate reminiscent of a nutty Oloroso sherry, but equally driven by ripping acidity and stone fruits. Pair it with a flavorful Szechuan roast duck or noodles with peanut sauce.
