Description

This wine is made of 100% Pinot Grigio. We would pair it with a crispy fried cod sandwich, with fresh lettuce and tomato. This “fuoripista” or “off-the-track” Pinot Grigio is so named partly because of Elisabetta’s unconventional choice to let it macerate with skins for 8 months in clay amphorae. Pinot Grigio grapes have red-ish gray skins, and so skin contact gives the wine a copper pink hue. The fruit is sourced from an old pergola-trained vineyard of alluvial sand and gravel soils worked biodynamically by a neighbor. Notes of fresh yellow peach, lemon, orange zest, taro and truffle. This wine is a masterpiece in sensory experience, equal parts floral and savory.
