Straw yellow with pale greenish highlights. The nose is fresh, intense and persistent, with a broad fruity note of ripe Golden Delicious apples and wild flowers, together with a faint, delicately yeasty fragrance. The palate is clean, restrained and well-balanced, with a delicate and appealing background of ripe fruit and a hint of crusty bread, both of which linger on the palate. Ideal as an aperitivo, with shellfish and lobster.

A refined and expressive sparkler in an aperitif style, this is bright and buoyant on the palate, with the fine, lacy mousse carrying a mouthwatering range of pineapple, mandarin orange peel and white cherry fruit, accented by ground ginger, white blossoms and fleur de sel. Ferrari’s base Brut (with a 2.5-million-bottle production) is a lovely sparkler with yeasty aromas of freshly baked bread and loads of dried fruit, honey and apricot. The mouthfeel is soft and creamy and this impression is reinforced by its foamy perlage.
