Description
100% Sauvignon Blanc. This is the estate’s first single-vineyard bottling, dating back to the 80’s, and is sourced from a northeast-facing lieu-dit that benefits from cooler growing conditions. The grapes are grown organically on a mix of Kimmeridgian and silex, that is plowed manually. The wine is aged in 70% Foudre and used barrels, and 30% stainless steel for 11 months, and a meager 800 cases are produced. This wine certainly rivals the best bottlings of its sister appellation, Sancerre, which is just a stones throw over east. Pair this with garlic, butter, and thyme braised monkfish, served with seared mushrooms and polenta.
