The De Pazzi IGT 2017 from Castello del Trebbio is a characterful red wine that is characterized by its intense ruby red color. The scent unfolds complex aromas of marasca cherries, small red berries, macerated violets, cocoa, pepper and tobacco. On the palate, it is full-bodied, soft and warm, with a dense tannin structure and excellent freshness, which results in a long, pleasant finish.
This wine consists of 60% Sangiovese, 20% Syrah and 20% Merlot. Sangiovese, known for its high acidity and strong tannin structure, brings lively fruit aromas and a good structure. Syrah adds elegance and spicy notes, while Merlot provides softness and fullness. This combination gives De Pazzi its particular complexity and balance.
The special feature of this wine lies in its careful production. The grapes are harvested by hand and, after destemming and gently squeezing, fermented in amphoras and stainless steel tanks. Some of the Sangiovese ferments in terracotta jugs, which gives the wine extra depth. After fermentation, the wine ages in tonneaux and barriques for 18 months and in the bottle for a further 12 months. This method promotes the development of complex aromas and gives the wine a remarkable shelf life of around 15 years.
