What was traditionally and historically reserved for the sweet wines enjoyed by the kings of old, has now ended up as a seriously concentrated, thought-provoking, flavor-packed wine of intrigue. The Manseng varieties grown in the lush, verdant hills of the Pyrénées usually achieve a certain level of ripeness that makes them ideal for producing sweet wines, but here, Madame Barrere and winemaker Damiens Sartori have gone beyond the status quo to make something unique and delicious. Pair this with duck cassoulet, a hearty shepherd’s pie, or ratatouille.
