Chardonnay DOC Sophie BIO 2024 from Manincor is an outstanding organic wine that captures the essence of the region and the winery’s dedication to sustainable wine production. Manincor, known for its biodynamic principles, is located in the picturesque Überetsch region on the South Tyrolean Wine Route.

This wine consists of 92% Chardonnay, complemented by 4% Viognier and 4% Sauvignon Blanc. Chardonnay is known for its versatility and brings rich fruit aromas and a creamy texture. Viognier adds floral notes and extra richness, while Sauvignon Blanc provides freshness and a subtle acidity.

The Chardonnay DOC Sophie BIO 2024 glows bright yellow in the glass. On the nose, it develops a fruity bouquet of apricots and oranges, accompanied by floral accents of acacia and linden blossoms. This is underscored by a mineral note that is reminiscent of wet stone. On the palate, the wine is dense and strong, but at the same time delicate with long-lasting minerality.

This wine is characterized by the complex production process, during which the destemmed grape berries remain in the press for four hours to macerate in order to extract aroma and structure from the berry skins. Fermentation takes place slowly and gently in wooden barrels of various sizes, spontaneously with the grape’s own yeasts. During the nine-month aging on fine yeast, the aroma and taste continue to refine.
