The Cabernet Garda DOC 2021 from Colli Vaibo is an impressive red wine that perfectly brings out the characteristics of the Cabernet Sauvignon grape. In the glass, this wine has a deep ruby red color with purple reflections. On the nose, complex aromas of red fruits, ripe berries and marmalade develop, accompanied by subtle notes of vanilla, spices and a touch of herbs. On the palate, the wine is dry and well-structured, with a balanced tannin structure and a long
, harmonious finish.
The grape variety in this wine is 100% Cabernet Sauvignon. This grape variety is known for its strong, structured wines with complex aromas and good shelf life. It grows particularly well in the morainic soils south of Lake Garda, where the vines enjoy optimal exposure to the sun in a
north-south orientation.
A special feature of this wine is the aging process. After the grapes have been picked by hand, fermentation takes place in stainless steel tanks, where the wine macerates for at least 10 days. The wine is then further refined in tanks to complete the alcoholic and malolactic fermentation and finally matures for around 6 months before bottling.
The climate in the Garda DOC wine-growing zone is temperate with warm summers and mild winters, which offers ideal conditions for growing Cabernet Sauvignon. The soils are predominantly moraic, which results in excellent drainage and mineral supply to
the vines.
