It is crafted using the traditional Metodo Classico, with secondary fermentation in the bottle followed by extended ageing on the lees, resulting in fine perlage, structure and aromatic depth.The term Pas Dosé means that no dosage is added after disgorgement. With zero added sugar, the wine presents itself in its purest form, allowing the grape character, vintage and origin to shine through with clarity. The 2020 vintage stands out for its freshness, mineral tension and precise structure.Careful grape selection and long lees ageing provide complexity and finesse. On the nose, aromas of citrus, green apple and white flowers are complemented by subtle notes of bread crust and brioche. On the palate, it is bone dry, vibrant and elegant, with lively acidity, a fine mousse and a clean, mineral-driven, persistent finish.
