Description

Abocado is an ancient term referring to sweet sherry-style wines made by the addition of partially fermented juice to finished wine. Gomez Nevado makes their Abocado from late harvest Arís from old vines added to selected barrels of Dorado. The Arís grapes are harvested very late, with a natural potential alcohol above 17%. The grapes were harvested by hand, pressed, and then the first run juice fermented in clay tinaja. When fermentation was partially complete, the partially fermented juice was added to wood casks containing a small amount of the 5-year-old Dorado wine, stopping fermentation. The wine then rests for at least 5 years. Evaporation leads to the elevated alcohol level: there is no fortification.

Grape varieties: Arís 100% (Native of Villaviciosa)
Preparation: Traditional raisin grapes and oxidative aging.
Aging time: 15 years minimum.
Alcohol: 17%
