Description
100% Poulsard from two separate vineyard sites at higher altitudes. The 60-85 year old vines are planted by selection massale. The wine is spontaneously fermented with native yeasts and goes through a lengthy maceration before being aged for three months in extremely old barrels. This wine is pure and lengthy, and packs a bigger punch for such a light bodied grape. Pair it with chicken thigh congee with lots of ginger.
