Sensory :
Straw yellow with subtle green reflections that evolve toward gold with age, this Gavi offers an expressive bouquet of citrus, white flowers, and crisp green apples. On the palate, it is dry, fresh, and harmonious, carrying flavors of lemon, pear, and a touch of minerality. Medium-bodied yet soft and captivating, it combines finesse with a lush, mouth-coating texture, finishing with refreshing elegance.
Winemaker’s Background:
The Bava family has cultivated vines in Cocconato, Monferrato Astigiano, since 1600, with their first cellar established in 1911. Over six generations, they have become renowned for their Barbera wines and their pioneering spirit, being among the first to adopt barriques in the 1970s. Today, their estate spans 50 hectares of vineyards and 20 hectares of natural fields across Monferrato and Langhe, managed with sustainable practices such as grass covering, non-synthetic fertilizers, and lightweight bottles to reduce emissions. The family, now represented by Piero, Roberto, Giulio, Paolo, Francesca, and Giorgio Bava, continues to craft wines that express both tradition and innovation.
Serving Suggestions:
Serve chilled at 9–10°C in medium white wine glasses. Ideal with lighter dishes based on fish, grilled or baked white meats such as chicken or turkey, and fresh seafood preparations. Its citrus brightness and minerality also make it a perfect partner for summer salads, vegetable antipasti, and delicate cheeses.
The 2023 Bava Cor de Chasse Gavi DOCG is a graceful and classic Piedmontese white that elevates the Cortese grape to nobility, offering freshness, elegance, and timeless charm with every glass.
