Sensory :
Aromatic and captivating from the first pour, ‘Clairin Milot’ opens with wild notes of underripe peach, clover honey, freshly cut grass, and a dusting of confectioner’s sugar. The palate is vibrant and mineral-driven, revealing flavors of mustard greens, red delicious apple, and dried apricot. The finish is dry, long, and layered with coastal salinity, a whisper of forest floor, and an earthy undertone that lingers with grace. It’s a spirit that feels alive, full of character, tension, and raw beauty.
Distiller’s Background:
Patrick St. Surin’s distillery in Carrefour Des Pères is a deeply personal endeavor, one rooted in his decision to stay in Haiti and build a future through tradition rather than escape. Since 2012, Patrick has farmed over ten hectares of native sugarcane and transformed it into clairin using a method steeped in heritage: cane hauled in by donkey, juice hand-poured into open fermenters, native yeast fermentation, and small-batch pot distillation. Neighboring farmers contribute to the effort by exchanging access to their cane for shared grazing land. Every bottle of Clairin Milot represents a defiant, joyous statement of cultural pride and artisanal excellence.
Serving Suggestions:
Enjoy neat or with a single cube to fully appreciate its layered aroma and structure. This clairin also elevates traditional daiquiris and tropical cocktails with its depth and grassy complexity. Best paired with fresh ceviche, grilled plantains, or jerk-seasoned meats.
Patrick St. Surin’s ‘Clairin Milot’ is more than a rum; it’s a living expression of Haitian soil, sunlight, and soul. Unfiltered, unadorned, and unforgettable, it captures the essence of craft in every fiery, beautiful sip.
